If you want to have Mongol invasions in the SW galaxy, it should be in the distant past or future, not right after the OT, which does in fact completely subvert the centerpiece of Star Wars. It creates a situation where it would've been better for the Empire to win, because they would've been far better equipped to fend off this menace, Death Stars in particular would've been an excellent antidote to worldships. So yes, the OT does lose all significance & meaning in that context, which is unacceptable. You could use this same postmodern, AI-sounding drivel in the OP to justify the inclusion of Disney Wars as canon.
On top of all that, there's a tonal clash. The Vong, with their grimdark aesthetic, simply don't fit the style of Star Wars. It's the alien invasion trope, but since the galaxy is full of aliens, now they're from another galaxy, which is very contrived.
As I've said before, the Vong feel like the brainchild of a WH40k fan who despises Star Wars and wants to take a sledgehammer to the galaxy, and that's on top of OT subversion. They simply don't belong, and cannot be salvaged without massive revision & rejection of their story arc.
