How have your tastes changed since you got into vtubers? 
When I first started watching, my favorite at Hololive was Miko followed by Pekora (this was still when PekoMiko was a thing) and Korone and my favorites at Nijisanji were Roa and Ars. My favorite indie/third party might have actually been Mea.
Now the only Holos I regularly keep up with are Nene, Luna, Watame, and Aqua. Himawari and Sasaki are the only Nijis I still watch. I haven't watched any indie/third party chuubas in like a year; I think the last one was Uto.

When I started, I watched a lot of Matsuri, Pekora, Coco, and Miko because I thought they were funny. Then the elitist-fags got mad at me for having fun and I was pressured into branching off into more "traditionalists" that were playing games I liked like Subaru and Korone along with a number of indies. I liked those too, but deep down what I really wanted to watch were idols and girls who discussed their daily lives/blogposted to fill the gap when blogposting became a bannable offense across several webring members that previously allowed it all at once, which got me into Nene, Watame, Ina, and a few (different) vtuber groups like PRISM Project's members since they filled that gap. Never really got into Nijisanji mostly because of the stigma against them.

To be honest I haven't really watched very many vtubers in the last several months other than some friends occasionally recommending Pippa or Botan streams because of other things (namely that big war in Slavland and the US Elections since war discussion and politics-posting are some of my other hobbies), but I've found myself getting drawn back into the fray with Yokato, Pikamee, and Sara Nagare once more.

I remember those folks saying that only newfags had Miko, Pekora, or Korone as their oshii. Strange for elitists to hate the elite.

I'm not sure they have.  I got into it with Korone's DooG clips, and the first things I watched were Okayu's SMRPG VODs.

At the time, I was pretty bought into OkaKoro.  Still am, but I have since learned that SubaOka is also peak.  That endurance run of Mario 64 especially.  I wish more of the girls did retrogames; I rarely jump the language barrier for anything else.  Koyori I've come to enjoy quite a bit.  I wonder if she stopped using the autotranslator because it would sometimes talk about rape? I was initially more interested in Lui, but her aesthetics changed rather oddly.  I found Iroha a little flat since debut, but after hearing about her problems I started listening occasionally.

I have IRyS' RE:0 VOD open right now, and she's as fun as ever.  I became a fan of her's when she did RE1.  Calli's been doing a Pokemon nuzlocke, which has been pretty good.  Fuwamoco should be designated a national treasure.

As for Niji, I loved Suzuhara Lulu and how she'd sometimes do silly things at the start of the stream, like eating Dracula.  I liked the animated run cycle in Hayase Sou's opening screen, and her singing.  I had liked Yashiro's retrogaming back in 2020, and checked in on him a few days ago and saw that he recently did a DKC race with Himawari.  I remember her from back then, too— the two of them did a "quiz" bit where Yashiro asked her who the newly elected president of the US was, and she answered "Watson Bakery."  I had watched Nui Sociere a bit, but couldn't connect to her personality.

I'm watching Salome play OoT right now.  She is delightful ですわ.

I like Amanogawa Shiina and Eepy Sleepy, though the Phase Connect girls in general are too cynical for me.  I think Kannagi Loki and Ayase Yuu have 11/10 models, which might be a sign that I've become desensitized to the cartoonier, more saturated designs of Hololive.

As for indies, I can't say I ever really watch any of the ones I track.  I can't remember if POSUTUBE actually uses an avatar for streaming, and I seem to be IP banned from youtube this month so I can't find out, lol.

"Tampopo Shogi" plays Japanese chess, and sometimes does other things.
"Maou Minmo" is a demon lady who's gone through a bunch of different models and does a lot of racing games.
"Watagashi unou" is mysterious, but she sometimes seems like a perfectly normal art student!
"Tatsumiya Akira" struck me as a bit of a kusogaki.  Haven't watched in a long time, tbh. https://yewtu.be/channel/UCpbCNrCQxju4FMMxH_3Zg9A

On the whole, I like the same things but don't have as much time for much, except my favorites.
